Iron bioavailability from biofortified Irish potato and orange-fleshed sweet potato

This was an open-label, randomized, cross-over, multiple meal study in women with marginal iron status in Zomba assessing fractional iron absorption in young women of reproductive age from regular and iron-biofortified varieties of orange-fleshed sweet potato (OFSP) in Malawi. Participants received a regular or iron-biofortified OFSP test meal as breakfast for 2 weeks followed by another 2 weeks with the other test meal type which were labelled with 57Fe or 58Fe stable isotopes. Erythrocyte incorporation of stable isotopes was measured 14 days after completion of each test meal sequence.
